Fold and seat the filter

Put the filter in with the single sheet away from the spout and the three sheets against it.

Rinse

Rinse the filter with hot water and pour the water out.

Step-by-step recipe

Bloom and stir

Pour 150 g and stir so that no grounds are left dry.

Second pour

Pour to 450 g with a wiggling motion, then a gentle spiral.

Final pour

Pour to 700 g, pouring over the dark spots rather than the light ones.

Drain

Aim to finish around four minutes and lift the filter out.

Notes

A full carafe, built on a very large bloom: 150 g of water for 42 g of coffee, which is more than three times the dose and far more than most bloom advice. Stirring it so no grounds stay dry is the step people skip. Two pours after that and it is done in four minutes.
