Preparation
Fill the boiler
Fill the bottom chamber with water up to, but not above, the safety valve. Keep the valve clear.
Fill the basket
Drop the funnel in and fill it with ground coffee. Level it off with a finger. Do not press it down.
Assemble
Wipe any grounds off the rim and screw the top on firmly.
Step-by-step recipe
Heat it
Put it on a medium hob with the lid open so you can watch. Coffee should rise slowly and steadily, not spit.
Take it off at the gurgle
The moment it starts gurgling, take it off the heat and close the lid. Serve straight away.
Notes
Alfonso Bialetti's design is from 1933 and the instructions have not really changed. Two of them matter more than the rest: fill the boiler only to the safety valve, and never tamp the coffee. The basket is not a portafilter, and packing it turns a gentle percolation into a fight the pot will win by making the coffee bitter. Take it off the heat the moment it gurgles.
