Every brand cuts the burrs in its grinders to its own design, which is why a recipe tuned on a Comandante comes out watery on a JX-Pro. The converter settles it: pick the grinder the recipe used, pick yours, and it tells you which click that translates to. It works with ten brands so far, Comandante, 1Zpresso and Timemore among them.

Its minerals decide how much flavor comes out of the bean. Too soft and the cup lands watery and sour however far you move the grind. Too hard and the acidity flattens. Put in your hardness and alkalinity: the analyzer tells you what to correct and by how much. Test strips give you both in a minute, or look it up on your water brand's site.
