The Moka Pot wants a medium-fine grind: finer than V60, quite a bit coarser than espresso. The reason is pressure: a Moka Pot pushes water with very little force compared to an espresso machine, so an espresso grind chokes it (burnt, bitter cup) and a filter grind lets the water rush through without extracting (thin, watery cup).

Where those numbers come from
The table isn't a matter of opinion: it's one particle-size window translated to each grinder's dial. The Moka Pot's window runs from 450 to 570 microns, and inside it the starting point is set by the coffee's process:

Roast goes on top of that: light stays at the starting point, medium adds +30 µm, dark +60 µm.
A Moka Pot punishes dark roasts more than almost any other method, because the coffee sits cooking above the boiler while the pressure builds. And a dark roast comes pre-loaded for bitterness: longer in the drum, more porous, more soluble, quicker to give up flavor. Ground to the same setting as a light roast, it over-extracts before you can do anything about it. Light roasts are denser and harder, so they take that extra time better and need more surface area to give up what they have.
The table above already accounts for this: each grinder's range runs across the processes and roasts end to end, and the starting point is its fine end. Dark roast, move toward the top of the range. Light roast, stay near the starting point.
Heat matters as much as grind
In most methods grind leads and everything else follows. Not here. A Moka Pot gives you two controls (your grinder's setting and the flame) and both push the cup in the same direction, which makes it very easy to correct one when the problem was the other.
Heat medium-low, always. On a high flame the boiler hits pressure all at once, drives water through the coffee too fast, and drags bitterness out of the tail of the cycle. The effect is identical to grinding too fine, which is where the confusion comes from: grind it right but crank the heat and you'll go blame the grinder.
The other half is when you pull it. What comes out at the start and what comes out at the end are not the same coffee: those last seconds, when the flow turns pale and starts to gurgle, are mostly scorched notes. Take it off the heat at the first gurgle and the cup changes without touching anything else.
Pro tip
Before you touch the grinder, brew one controlling only the heat: medium-low flame, off at the first gurgle. If the bitterness goes away, you never had a grind problem.
Dose and water: the pot decides
Unlike a V60, a Moka Pot's recipe is set by the pot itself: the basket filled without tamping (12 to 25 grams depending on the model) and water up to the safety valve (100 to 400 ml). The ratio settles on its own, usually between 1:7 and 1:12. Don't chase an exact ratio by half-filling the basket: a basket with air in it channels and extracts unevenly. And fill the boiler with hot water, not cold; the why is below, in the questions.
The brand doesn't change the grind. Bialetti, Alessi, or anything else: the water rises with the same pressure and asks for the same particle size. What does change from pot to pot is how much coffee fits in the basket and how much water goes in the boiler, and that comes down to the pot's size, not its maker.
Pro tip
If your pot is too big for the cups you actually make, don't half-fill the basket: use a smaller pot. The basket works full or it doesn't work well.
How to dial in your setting
The table puts you in the right place. These five steps take you from the right place to yours:
- Start from your grinder's number for the coffee's process, and correct for roast if you need to.
- Settle the heat before anything else. Medium-low flame, off at the first gurgle, the same every time. If the heat moves between brews you can't read what the grind is doing.
- Brew and taste. The stream gives you hints (it should come out calmly, dark, without sputtering), but the cup is what decides.
- Move one step at a time. Bitter, coarser. Watery, finer. One step, not three.
- Write it down. The number that worked for one coffee is your reference for the next one at that roast and process.
Most coffees land within a step or two of the starting point. If you find yourself far outside your grinder's range, the problem is almost never the grind: check the heat, how full the basket is, and the state of the gasket.
Pro tip
Change grind or heat, never both at once. If you move both and the cup gets better, you're left not knowing what the problem was, and next month with a different coffee you start over from scratch.

Common problems
The coffee sputters and spits
Too much pressure for the path you're leaving it. Grind one step coarser and lower the flame. If you're already at the coarse end of your grinder's range, the problem is the heat: a Moka Pot never needs a high flame at any point in the cycle.
It comes out fast, pale and watery
Grind too coarse, or a half-filled basket. Go one step finer and check that the basket is filled to the top and leveled, without tamping. A basket with air in it lets water through the gaps instead of through the coffee.
The cup tastes bitter even at the right setting
Almost always the tail of the cycle. Pull it off the heat as soon as the flow turns pale and starts to gurgle: what comes after that adds bitterness and little else. If it's still bitter, start with hot water in the boiler to cut the time the coffee spends cooking on top.
Steam or water escapes from the safety valve
The pressure can't find its way out through the coffee. Usually grind too fine, a tamped basket, or a clogged filter. Grind coarser, stop compacting, and check that the basket's perforated plate is clean. If it happens at any grind setting, it's the boiler: you filled it above the valve.
The coffee doesn't come up
Three causes, in order of frequency: the gasket is worn and losing pressure, the pot isn't screwed together properly, or the grind is so fine it has sealed the path. Check the gasket first: it's a wear part and gets replaced every year or two depending on use.
It tastes metallic or stale
If the pot is new, the aluminum needs a few break-in brews; make two or three and throw them out. If it isn't new, it's old oils: take it fully apart, wash with hot water and no detergent, and dry every piece separately before storing. Storing it assembled and damp is what produces the stale taste.

Can I use an espresso grind in a Moka Pot?

Should you tamp the coffee in the basket?
No. Fill the basket to the top and level it with your finger or a gentle tap, without compacting. Tamping raises resistance and does the same thing as grinding too fine: a slow, bitter extraction.
Cold or hot water in the boiler?
Hot, just boiled. Start from cold and the coffee spends several minutes cooking above the boiler while the water heats up, and that slow warming adds bitterness. With hot water the cycle starts sooner and the cup comes out cleaner. One warning: the pot is burning hot from the first second, so assemble it with a towel and screw it together carefully.
High or low heat?
Medium-low. On high heat the water shoots through and scorches the coffee at the end of the cycle. When the flow starts to gurgle, take the pot off the heat: whatever comes out after that isn't helping.
Why isn't the coffee coming up my Moka Pot?
