Preparation
Rinse the filters
Rinse two standard paper filters and set the brewer up inverted.
Step-by-step recipe
Pour
Pour 100 g of water at 88 C in a circular motion over the grounds.
Stir
Stir five times, north-south then west-east.
Steep
Leave it capped until 1:30.
Flip and swirl
Flip the brewer onto the carafe and swirl it.
Press to weight
Press at roughly one to two grams per second and stop at 66 g of concentrate.
Dilute and cool
Dilute to 152 g and let it come down to about 54 C before serving.
Notes
Second place in 2025. Notable for controlling the press by flow rate rather than by clock, and for pressing to a weight, stopping at 66 g of concentrate rather than at the hiss. Served cool, around 54 C, which is well below where most people drink coffee and is the point.
