Rinse the paper filter and screw the cap on.

Bloom
Add 40 g of water at 78 C and let it sit.
Stir
Stir five times.
Fill
Add the remaining 210 g and stir once.
Press slowly
Press very slowly, taking about seventy-five seconds, and stop while roughly 45 g of slurry is still in the chamber.
Notes
The 2014 world winner, and one of the last champions to brew upright and undiluted. The distinguishing move is a seventy-five second press, which is roughly three times slower than most people manage, and stopping with about 45 g of slurry still in the chamber rather than pushing to the hiss.
