Preparation
Wet the filter
Pre-wet the paper filter before you cap the brewer.
Step-by-step recipe
Pour
Add 150 g of water at 84 C over fifteen seconds.
Stir
Stir for twenty seconds.
Cap and steep
Cap with the wet filter and leave it.
Flip and press
Flip and press, stopping at about 90 ml of concentrate rather than pushing through.
Dilute
Open it up with about 180 g of hot water.
Notes
Won in Seoul in 2017. The concentrate comes out at around 90 ml and roughly four and a half percent dissolved solids, which is espresso territory, and then gets opened up with almost twice its volume in hot water. Pressing to a target rather than to the hiss is what keeps it clean.
