Fold and seat the filter

Open the filter so three layers sit against the pouring spout and one against the back.

Rinse thoroughly

Rinse with plenty of hot water. This washes the paper and warms the glass. Tip the water out.

Bloom

Pour about 60 g, just enough to wet the bed, and let it swell.

First pour

Pour in slow circles to about 250 g, keeping the slurry roughly halfway up the cone.

Second pour

Continue to 450 g, pouring slowly and avoiding the paper.

Drain

Let it finish. The thick filter takes its time. Lift the paper out as soon as it stops dripping.

Notas

Peter Schlumbohm patented the Chemex in 1941 and the method has barely moved since. The filter is the whole design: it is much thicker than a normal paper, it takes out more oil than any other brewer here, and it is why the cup is so clean and why the brew takes four minutes rather than three. Fold it with three layers against the spout, and rinse it properly or you will taste the paper.
