Preparation
Rinse the filter
Rinse the paper and set the brewer up inverted.
Step-by-step recipe
Pour
Pour 150 g of water at 81 C over about fifteen seconds.
Stir
Stir until the half-minute mark.
Steep
Cap it and leave it until one minute.
Flip and press
Invert onto the carafe, swirl once and plunge.
Dilute
Add about 110 g of hot water to the concentrate and taste as you go.
Notes
A big dose, a coarse grind and a short contact time, then roughly 110 g of water added at the end to bring it back to drinking strength. This is the shape most championship recipes have taken ever since: brew something concentrated and correct, then dilute it. Water here is brewing plus bypass.
