Rinse the filter

Rinse a single paper filter and set the brewer up inverted.

Split the dose

Weigh the 18 g out as 16 g and 2 g. The 2 g goes in later.

Step-by-step recipe

Brew the first 16 g

Add 16 g of coffee and 100 g of water at 89 C.

Stir

Stir for about five seconds.

Add the last 2 g

Add the remaining 2 g of grounds on top of the slurry.

Stir and cap

Stir five seconds more, draw the plunger up to seat it and cap the brewer.

Flip and press

Flip and press over about thirty seconds for roughly 75 g of concentrate.

Dilute twice

Add room-temperature water to 115 g, then hot water to 155 g. Taste before serving.

Notes

Won in Athens in 2023 with a trick nobody else was doing: adding the last 2 g of coffee partway through the brew, so a fraction of the grounds gets a much shorter contact time than the rest. The concentrate is then opened up twice, once with room-temperature water and once with hot.
